They say breakfast is the most important meal of the day, but want to know my favorite meal of the day? Brunch. There’s something about this lazy mealtime that seems a bit decadent. You want eggs and dessert? And a cocktail? Go right ahead – it’s brunch!
While fabulous brunch places abound, there are times you might want to make your house the place to be for this indulgent affair. Think it’s too complicated? Check out these “easy” and “easier” tips for creating brunch for you and yours:
Easy: After your guests arrive, prepare Scrambled Eggs with Boursin Cheese. Takes about 20 minutes start to finish, and it’s pretty brainless if you’re used to making scrambled eggs.
Easier: Overnight Artichoke and Ham Strata
Easy: Paula Dean’s make-ahead French Toast Casserole
Easier: Refrigerator cinnamon rolls. Seriously. By the time the smell hits your more judgmental friends, they’ll have forgotten you didn’t make them from scratch.
Easy: The night before, combine equal parts apricot nectar, orange juice, and grapefruit juice. When ready to serve, add three parts sparkling wine or water. Serve in a champagne glass.
Easier: The night before, chill a bottle of Bellini mix. If you want to hide the fact that it’s pre-made, transfer it into a pitcher. I won’t tell. Combine with sparkling wine or water and serve in a champagne glass.
Easy: For brunch, I like swingin’ crooners such as Tony Bennet, Frank Sinatra, Pink Martini, and Diana Krall. Select some upbeat songs from your iPod or CDs for a bright morning mix.
Easier: Plug your laptop into your stereo. Log onto Pandora (step-by-step instructions here), and let the software make a mix for you.
